Fun Mini Quiches

Lately I’ve been frustrated with the “grab and go” choices for my breakfast. I’m tired of cereal and I’m just not that into toast in the morning.

So I decided to make some Mini Quiches.

I’ve opted to leave out the crust for a lower carb version.

First thing I did was rummage through the fridge to see what might be good in them. I came up with Onion, Red Bell Pepper, Ham (Boars Head Tavern – my favorite!), Mushrooms, Parmesan Cheese and Spinach.

I steamed the Spinach, but all I did was chop the other ingredients.

I whipped up 11 Eggs ( I would have used a whole Dozen, but that’s all I had) and 1/4 cup of milk and added 1/2 tsp Salt and Pepper.

It’s important to coat the Muffin Tins well with Cooking Spray. Eggs tend to stick. You could use paper muffin cups if you prefer.

Now for the fun stuff! I filled the muffin tins with the egg mixture. Then I just dropped in whatever combination of flavors that sounded good.

Baked for 30 minutes and now I have breakfast for a week! These heat up well in the microwave, but they are also delicious cold.

This would be a really great Breakfast following a child’s sleepover! Let each kid make their own. Just choose your favorite ingredients and have fun.
