New York Cheesecake Recipe

My husband told me that the only thing he wanted for his birthday this year was a New York style Cheesecake. Naturally, right when I decide to clean up our eating habits…

Oh well, it’s only once a year right?

So here is my recipe that he was so keen to indulge upon.

9 Graham Crackers (one pack)

5 Tbs Butter, melted

1 Tbs Sugar

Crush the Graham Crackers (the back of a glass works well) and add in the Butter and Sugar. Mix well. Press into a 9″ Spring Pan and set aside.

That’s it for the crust. Now for the Cheesecake.

5 8oz packages of cream cheese

1 1/2 cups Sugar

3 Tbs Flour

4 Eggs

2 Egg Yokes

3/4 cup Sour Cream

3 tsp Fresh Lemon Juice

1/2 Tbs Vanilla

Start by combining the Sugar and Flour. Add to the Cream Cheese and blend until smooth. Stir in the Eggs and Yokes one at a time.

Next add in the Sour Cream. Stir in the Lemon Juice and Vanilla and mix until well incorporated.

Pour it into the prepared pan.

Bake in a pre-heated oven at 350 degrees for 1 hour. Turn off the heat and let the cake cool in the oven with the door ajar. Once it has reached room temperature, cover with plastic wrap and place in the refrigerator until fully chilled (at least 4 hours).

Bill likes his with Chocolate Syrup drizzled on it. Happy Birthday Honey!
