Date Nut Bran Muffins

I had some Wheat Bran leftover from  the horse treats I made the other day in my post My Horse Cookie Recipe. I figured the best thing to do was to make some treats for me too!  So today I’m making Date Nut Bran Muffins with apple sauce. These make a delicious and healthy breakfast that will fill you up, but not weigh you down. They are not loaded with sugar, but the dates and apple sauce add enough sweetness to keep your kids eating them too.

You will need:

2 1/2 cups Wheat Bran

3 cups Flour

2 tsp Baking Soda                DSC_0035

1 tsp Salt

1 tsp Ground Cinnamon

1/2 tsp Pumpkin Pie Spice

3/4 cup Boiling Water

1/2 cup Brown Sugar

1/4 cup Butter

2 Eggs

1 cup Apple Sauce                 DSC_0013

2 Tbs Honey

1 cup Milk

1 cup Chopped Dates

1/2 cup Chopped Nuts

Preheat the oven to 400 degrees.

Begin by stirring the boiling water into the Bran and set aside.

Combine dry ingredients together – flour, baking soda, salt and spices.

In a large bowl cream butter and sugar. Add eggs and blend well. Stir in apple sauce and honey. Blend in half of the dry mix. Next incorporate the milk, followed by the remaining dry mixture. Toss in the dates and nuts.

Spoon into prepared muffin tins. Bake in at 400 degrees for 20 minutes.

I used Pecans because I always have those around. We have several acres of trees that produce more than I can eat. Fortunately they freeze well!  This recipe works well with any type of nuts. You may want to try Raisins too, in place of the dates.

This make a perfect lazy Saturday morning breakfast or a quick grab and go during the work week.
