Yesterday was Sunday. Normally we start our weekend days like all the rest with a cup of coffee and a piece of toast or some cereal. Yesterday though felt like it needed more. The leaves are definitely falling now. I had the back door (the one that opens to the screen porch) wide open to let in all that glorious crisp air.
For some reason the song “Banana Pancakes” by Jack Johnson kept running through my head. So naturally, I made some Pumpkin Pancakes!
I will admit that I cheated on these. I used Bisquick. There is a recipe on the back for Ultimate Pancakes. I used that one except I cut the milk down to 3/4 cup rather than the 1 cup called for. I added 3/4 cup Fresh Pumpkin Puree. Then just for a touch of extra flavor, I added 1/2 tsp Pumpkin Pie Spice.
I use a cast iron griddle. It distributes the heat evenly for a beautiful golden brown.
I served them up with 100% Pure Maple Syrup, Butter and a few Pecans (from our trees).
I think my husband ate 7 or 8 of them!
